E= Endive, Escarole [Frisee -but that's not an 'E']
Endive is a rich source of vitamins A and beta carotenes, folic acid, pantothenic acid (vitamin B5), pyridoxine (vitamin B6), thiamin (vitamin B1), niacin (B3)and the minerals: manganese, copper, iron, and potassium.
Try it in a salad, smoothie, lightly tossed in a skillet with some garlic infused olive oil, toasted sesame seed oil, pecans and currants. Finish off with a quick twist of some smoked Himalayan pink salt and a drizzle of aged balsamic vinegar. [It's thick like a molasses.]
