I just joined a produce co-op and we got our first drop on Wednesday. In it, I also had an eggplant. I must confess, I've never really cooked eggplant before...and I *do* like to cook. Anyway, I looked up something to do with it and found your eggplant pizza recipe. I didn't want to do the grill for just a few slices so I pan sauteed it (not to a mushy state - more of a browned-on-both-sides state), added some chicken breast, mozzarella and some low-carb red pasta sauce. YUM, YUM, YUM!!! Ohhh thanks for an awesome idea!! :) I'm a little too full with my two slices..oops. I'll definitely be looking for more eggplant ideas but this one will be a great lunch tomorrow...and supper on Sunday...and maybe lunch on Monday too... lolol

Delicious! Isn't that a great thing! Depending on how you cook the eggplant you can get either a crisp or a mushy texture. They're good in different recipes. You can do eggplant Italian style, Mexican style, you name it!

I love eggplant. I've done a saute mixture of onion, eggplant, green tomatos, green pepper and mushrooms. Very tasty.

That sounds delicious granny! I'm currently not a fan of green tomatoes but I can add those to my list of things to try more of!

Fried green tomatoes are superb! :) Wonder if it would have the same effect using almond flour instead...hmmm...

Malapert.. I like mine fried with not coating..just the green tomato, salt and pepper...

Maybe that's the difference, maybe I've only had the store ones. I know when I grow fresh red tomatoes from my garden that they're full of flavor and delicious!
