I just joined a produce co-op and we got our first drop on Wednesday. In it, I also had an eggplant. I must confess, I've never really cooked eggplant before...and I *do* like to cook. Anyway, I looked up something to do with it and found your eggplant pizza recipe. I didn't want to do the grill for just a few slices so I pan sauteed it (not to a mushy state - more of a browned-on-both-sides state), added some chicken breast, mozzarella and some low-carb red pasta sauce. YUM, YUM, YUM!!! Ohhh thanks for an awesome idea!! :) I'm a little too full with my two slices..oops.
I'll definitely be looking for more eggplant ideas but this one will be a great lunch tomorrow...and supper on Sunday...and maybe lunch on Monday too... lolol
