For Jumbo Flan, summon Anima. Continuously use Pain, and Haste and Shell work well for Anima as well. For Neslug, make sure Wakka and two other people hit for 99,999. Have Wakka use Attack Reels and get the full 12 hits. Then, use Quick Hit eight times on Neslug. Use entrust and fill Wakka's overdrive gauge again. Use another full hit Attack Reels, and then Neslug's shell will come off. After that, it's all just Quick Hits. He should go down in no time.
