Try my recipe for this delicious version of Brussels Sprouts - easily turn it vegan or vegetarian by omitting the bacon.

Take advantage while sprouts are still in season through the beginning of March. Delicious!

I will definitely give your recipe a try! It looks and sounds great. I have been a Brussels hater most of my life because I always had steamed sprouts. They're not spectacular.

A couple years ago my cousin made roasted Brussels sprouts with bacon, garlic and almond slivers for Thanksgiving and they were actually really good. Ever since, I've decided I'm just a steamed Brussels sprouts hater. smile

Thanks, too, for the tips on how to buy. I've never seen them on the stalks, but will try a different store near me to see if I can find them fresher.

Brussels sprouts ROCK - if made well, they are delicious & healthy! Roasted is one of my fav ways to eat them :-)

I agree with Sadhana! I love brussels sprouts! I make them roasted and with a hot bacon dressing.

Today, there's a Yahoo article about making vegetable chips and you can turn brussels sprouts into chips by taking off the leaves, slicing the hearts thinly, sprinkling with olive oil and roasting in the oven. I love kale chips made this way so I can't wait to try the sprouts this way, too!

Thanks everyone for your comments.

I love the brussels chips idea. This recipe was a big hit. I wanted to add toasted walnuts to it but some members of my family turn their nose up at nuts in a recipe sometimes, so I just left them out. But it's an addition for you though if you like.

And Yes! Sadhana, sprouts do ROCK!

I have to do an experiment to see if these would stand the freezer, by either blanching or some other method. I know we can buy these frozen in the grocery store, but to me they are watery and unflavorful. Hmmm!

Sure, but I don't really measure anything so you'll have to adjust according to your own tastes--and the quantity you want to make. I know you can do it since you're a great cook! I'll guess at the amounts for now:

6 slices bacon
1/4 small white onion, diced
1 garlic clove, minced
1/4 cup white sugar
1/4 cup cider vinegar
1/2 cup water
cornstarch slurry (1 Tbsp. cornstarch mixed with a bit of water)
4 Tbsp. olive oil or vegetable oil
1/2 tsp. dried rosemary (optional)
salt, pepper to taste

In a skillet, fry bacon until crisp. Drain on paper towels. In bacon grease, saute onion and garlic. Add sugar, vinegar and water. Cook over medium heat until onion is completely soft.

Add remaining ingredients and whisk over low heat until thickened.

Crumble cooked bacon and add to thickened hot dressing.

This is a sweet-sour dressing that we just love. Do adjust the sugar and vinegar according to your own tastes! There are a lot of variances (amount of fat rendered by bacon, how salty the bacon is, etc.) so you must adjust.

OH DEAR!

How on earth is a girl supposed to lose weight with y'all around?

I love brussel sprouts, steamed, then chopped into four then lightly fried (2 mins or so) and served with sausages and mash.

I use the melted butter, salt to taste, and white pepper sauce I fried them in over the Brussels. It's great.

But, I am going to try your recipe Allyson, and now I must find an excuse to make your hot bacon dressing - it sounds too decadent to miss.

Hello All!

Growing brussel sprouts in containers is possible for sure and I have done so - though my yield was small, it was very tasty when events in my kitchen had sorted them out!

Anyway - does anyone grow their own?
