About the food though? I too, do the "food-n-go!"
I'm scattered all over the place right now. So, I make stuff in advance, like what you suggest.
For me, I cut and put into containers (in the fridge) - like one for cheeses (not just one, but a myriad of different types). I'll have others for say broccoli, carrots, roasted potatoes and
SOUPS (oh my gosh) how wonderfully easy that is!!
So, I'll make a big bunch! But, I'll ladle 3 cups of whatever, broccoli cheese, veggie soup, clam chowder, or my favorite, lol, chilli!!
So, when I'm stressed or just not feeling well, I've even made an entire chicken for a great noodle soup, stock or broth...but the point is - it's there when I'm just not "feelin-it." Not up to cooking

Today, especially though, I...have to think...OH - roasted mashed or red-smashed potatoes w/skins, spinach veg. soup (kind of like minestrone) baked beans, ham and a croissant (but only half, lol).
In colder months, I'm more into warming/comforting foods, like stuffed shells (that's probably next on my list

homemade marinara and garlic bread OF WHICH, my husband most often eats the greatest.
Per request though, it's Talapia and shrimp scampi w/angel-hair pasta. He shares that reg. spaghetti is just to heavy for him to eat. A salad of course (olive garden dressing)!
