My latest article is live. It's a fantastic Zucchini Quick Bread Recipe...and my children just love it. It's great for all as an on-the-run breakfast or a afternoon snack for the kids! Packed with power sustaining ingredients and keeps for a good week in the fridge. Crunchy on the outside and wonderfully moist on the inside, with a hint of brown sugar throughout - a great balance!

Zucchini Quick Bread

I'm going to try this recipe. I got a good harvest of zucchini this summer and shredded it all and put 2 cups in plastic bags and they are in the freezer just waiting to be baked!

That's great Launa! I think you will love it. It isn't overly sweet, you taste a little sweetness when you're almost done eating it. The ingredients and textures go well together and it kept for a whole week in the fridge.

My twins (10 yrs), chirped up and said "Mom?", I said, "yes?", They said "this bread is really, really good!" I smiled. They sometimes have a big slice with a glass of milk for school in the morning. Let me know what you think if you try!
