If you are not a fire-eater, do try cooking with the Mexican mulato chilli. It is low on the heat scale and has a wonderful flavour, slightly sweet, slightly smoky, fruity, almost chocolatey - and it definitely will not blow your head off!
The Mulato is a dried chilli, Allyson. I get mine in the UK via mail order but I am sure there are countless suppliers in New York. The Whole Foods Market in London stocks them so WFM in NY? Once you have laid your hands on some, do cook with them, their flavour is quite wonderful.
I am working in Manhattan this week and there's a WFM just on the corner. I will go in tomorrow on lunch and ask if they have it. I love cooking Mexican food.
