These chocolate chip instant coffee muffins may sound kind of strange, but they will have you reaching for seconds and quite possibly thirds.

I have regular bland instant coffee in my RV, but i get them at CVS when they have Extra Buck specials. Then I add my own cinnamon and vanilla to them, which are considered antioxidants.

I try to add cinnamon to everything I can think of.
