Fourth of July is a great time for Potato salad. Well anytime is a great time for potato salad....What are some of your favorite recipes? Post them here for everyone to enjoy. smile

I made potato salad as my contribution to a 4th of July bbq.
It is always a big hit.
Potato Salad receipe.

5 lbs. of potatoes, cooked, peeled and cubed

celery � diced � about 1/2 cup

onion � diced � about 1/2 cup

celery seed to taste

add to cubed potatoes

mayonnaise � about 2 cups

capful of white vinegar

pinch of sugar

sweet pickle juice to taste

salt and pepper to taste

Mix the mayonnaise, capful of vinegar, pinch of sugar, sweet pickle juice in a separate bowel until smooth. I use a mayonnaise jar.

Add to potatoes and mix well.

Refrigerate.

I grew up on potato salad that consisted of eggs, mayo, and potato. Sometimes, I still enjoy the simplicity of it; however, I normally make the following:

10 lbs potatoes (red skinned)
16 oz sour cream
1 cup mayo (more if the mix seems to dry)
1 cup bacon bits
sprinkle a little sugar across the top
salt
pepper

Great sounding recipes. I LOVEEEEEE potato salad. The second one reminds me of a German potato salad.

The fun thing about potato salads is that there is such a variety. You could have everyone bring a potato salad to a pot luck and the table would be loaded and yet not one would taste like the other. I'll be sharing potato salads from across America - so get ready for summer!
