I love carbonara, but it makes me nervous to think of the eggs not really being cooked.

I understand, it's the same concern some can have about eating sushi, custard, homemade ice cream, Cesar salad dressing or even Tiramisu` and spinach salad, all made with raw eggs or other raw ingredients that can potentially transmit harmful bacteria.

Regarding Carbonara, although the heat of the pasta cooks the egg just enough to make it safe for most people, in the presence of a compromized immune system or other gastro-intestinal problem, I would absolutely opt for pasturized eggs. They are always safe and available in main grocery stores.

I hope this helps.

I only buy farm fresh eggs where the chickens have free range. I don't care for the taste of eggs from the grocery store, nor do I care for the conditions that chickens live in from the commercial farms.

On a side note, I do not eat sushi or the other foods you mentioned. I am picky about food sometimes but enjoy most things. Like I said, I do love carbonara. Maybe I will get brave and make it some time.

I am with you on picking what you eat. I do the same, and I eat fried eggs (uncooked yolk) only at home, where I can trust the quality of my eggs. Then again, cross contamination can potentially occur anywhere.

There are also variations of the Carbonara recipe that add heavy cream to the eggs and cheese mix and let it gently cook for a brief minute with the pasta and pancetta in the pan. That way the egg cooks but doesn't come out scrambled. It's not the real thing, but a different way to make it.

Again, let me know when you get brave... smile
