I only buy farm fresh eggs where the chickens have free range. I don't care for the taste of eggs from the grocery store, nor do I care for the conditions that chickens live in from the commercial farms.
On a side note, I do not eat sushi or the other foods you mentioned. I am picky about food sometimes but enjoy most things. Like I said, I do love carbonara. Maybe I will get brave and make it some time.
I am with you on picking what you eat. I do the same, and I eat fried eggs (uncooked yolk) only at home, where I can trust the quality of my eggs. Then again, cross contamination can potentially occur anywhere.
There are also variations of the Carbonara recipe that add heavy cream to the eggs and cheese mix and let it gently cook for a brief minute with the pasta and pancetta in the pan. That way the egg cooks but doesn't come out scrambled. It's not the real thing, but a different way to make it.
