Eggs are perfectly packaged protein units of food, and a dozen are usually reasonably priced. They make a great base for thousands of dishes.
What great frugal egg meals have you discovered?

My favorite and quickest way to incorporate eggs into a meal is to do a big scramble. I beat some eggs, add black pepper, dill, parsley, and usually cheese. Then in goes just about anything....loads of veggies such as broccoli, zucchini, green beans, onions, peppers, tomatoes, mushrooms (any or all, depending on what's on hand or leftover from a meal...most veggies either cooked, blanched, or sauteed). Then into that mixture goes any meats if I want that's been cut into small pieces....chicken, sausage, bacon, ham, etc.
I scramble it all up and I usually have enough for a few meals. It's easy enough, delicious, and full of protein. It fills me up for hours.

I often fix eggs that way, too, Debbie. A good scramble is easy and a very good way to use up leftovers, like veggies. Every time I go to a family gathering, there is a tray of fresh cut-up vegetables that no one eats. I always put dibs on it, bring it home and use them up in an omelet or scramble.
I like chopped boiled eggs in a green salad to add protein and a more filling supper salad. Served with soup and/or a sandwich it makes a good meal.
Chopped boiled eggs in - fried rice - rice-a-roni - tuna fish - hash browns

I love French toast. Have you ever made the bread slice with a hole in it to put the egg in? I just lost the name for that...it was right on the tip and I lost it. I also put an egg in the center of a pancake sometimes. That is so good.

Phyllis, I think you mean toad-in-hole, what a great name!
Homemade quiche is actually pretty frugal. leftover veggies and meat mixed with eggs, pureed in homemade pie crust and baked. And the fancy french name makes it sound special.

My favorite was one I threw together with curry and peas and I forget what kind of cheese. Yum.
Oh, maybe there were onions in it too!

When I make my french toast I do a quick dip and don't soak the bread until soggy. I like my toast with a little more body. I add vanilla and cinnamon to my beaten eggs too. It tastes so good with a little maple syrup when serving.
