This is the coolest lunch ever, not to mention the easiest, and will be the envy of your kids' classmates. If peanut butter is off limits at your child's school, use cream cheese as a spread instead. Banana Dog in a Bun Ingredients * 1 hot dog bun (whole wheat, if possible) * 1 tbsp. (15 mL) peanut butter (or cream cheese) * 1 tbsp. (15 mL) strawberry or other jam (or honey, if preferred) * 1 whole banana * raisins, shredded coconut or chopped peanuts Cooking Instructions 1. Spread one inner surface of a split hot dog bun with peanut butter or cream cheese. Spread the other side with jam or honey. Wrap in plastic wrap and place in your child's lunch bag. Also, pack a whole banana (in the peel) and a small container of toppings, such as raisins, coconut, peanuts or whatever else you can think of. 2. At lunchtime, your child can peel the banana and place it in the bun, sprinkle on the toppings and eat. 3. Let the other kids drool. It's your lunch, kiddo, and you're the boss of it. Enjoy!

Clenbut - do your kids have lunch at home or at school? what I mean is the pasta a packed lunch?

I find fritatas easy and healthy - they are more or less a veggie omelette quick and easy.
Grate a small potato and small carrot and put in a bowl in the microwave for around 4 mins, I usually add a few 'lumps' of frozen chopped spinach to this - does your frozen spinach come in ping pong ball sized lumps?)
Grate some zucchini and cheese (cheddar usually - but any will work) add this to the potato when it comes out of the microwave, break in two eggs and with a frok mix the whole lot together.
heat a fry pan with a little oil (or cooking spray)
Put large spoonfuls of the mix in the fry pan and cook til golden on each side.
you can serve these hot or cold ... we nearly alwasy take these on picnics and the kids love them!

Most schools do not allow peanut butter to be included in kids' lunches (due to food allergy issues). Also, my nephew has to pack a Kosher lunch. Ideas for Kosher would be helpful.
