There is one recipe that I love that uses a can of tomato soup. It's a taco bake. I get a lot of compliments on it, and it is so easy. I'll have to look for the recipe since I don't want to leave anything out.

Hi Jenny,

Forgotten Chicken is a recipe from a TX Hill Country Cookbook. I make it when I have a lot to do and need to throw something quick together. The chicken comes out nice and moist.

1. Preheat oven to 350 degrees farenheit.

2. Grease a baking dish and add 1 cup rice.
In a separate bowl, mix 1 1/2 cups of water with 2 cans of cream of chicken soup. Pour some over the rice and let sit a few minutes.

3. Add 4--6 boneless, skinless chicken breasts and pour remaining soup/water mixture over it.

4. Sprinkle with 1/2 packet of onion soup mix.

Cover with foil and bake for 2 hours.

I like to make pea soup during the winter. A nice piece of smoked meat and peas, onions and carrots - simmer for a few hours and it makes a delicious warm meal.

I also make Brunswick stew - Shredded beef, chicken and pork, creamed corn, diced can tomatoes, tomato sauce, vinegar, onions...

We love soup in our house. Some of our favorites are vegetable beef. Italian wedding soup, pasta fazool (pasta & bean soup), shrimp bisque. I make them from scratch. Add a salad and some bread or biscuits and enjoy.

My favorite soups for the Winter Season are Seven-Bean, New Orleans Shrimp Gumbo, Oyster Stew, and ... Chili, of course!
