I made this yesterday with a bit of tweaks since I didn't have all the exact ingredients but it came out pretty good. I know it's odd thinking of celery as a main or side dish but I was actually looking for something different and healthy. I will take a pic of what I made, or maybe not, since I add some ground flax seeds. Hahahaha. I also added some leftover cut up tofu I had sauted in butter and garlic for some protein and some leftover corn and peas. I did substitute Cream of Potato soup for cream of mushroom. But IF you make this according to the recipe I think it might be different than what I came up with.
Far East Celery
4 to 5 cups sliced celery
1 5oz can waterchestnuts
1 can cream of mushroom soup
1 small jar pimento, drained and chopped
2 Tbspn butter
1/2 cup slivered almonds
1/2 cup bread crumbs
Cook celery 8 min in salted water. Drain.
Mix celery, waterchestnuts, soup, pimento in buttered 1 Qt casserole dish.
Melt butter in skillet and lightly brown almonds then add bread crumbs and sprinkle over casserole.
Bake 350 for 35 minutes.
Serves 6. { Which I seriously doubt }
