Hi! I'm back on the low-carb wagon after a long hiatus. I've been either pregnant or breastfeeding for 9 years so I was unable to maintain the low-carb status. And I have a lot to lose (4 pgcys)!
I started today and in looking around for some recipes, stumbled across this site. I'm looking forward to having some support this time. :) I previously lost some good weight doing low-carb and was really anxious to get the holiday weekend past me so I could get started again.
So, I'll give something back already and post a recipe that totally rocks...
Stuffed Mushrooms
15 medium mushrooms
1 package cream cheese
1/4 cup bacon bits
1/4 teaspoon onion powder
1 clove garlic, finely chopped
grated cheddar cheese
salt and pepper -- optional
Remove stems from mushrooms by gently pulling, set caps aside. Chop stems and saute in butter with garlic and onion powder. Soften cream cheese then add sauteed stems and bacon bits and mix well. Turn mushroom caps upside down on cookie sheet and stuff mixture into caps. Top with a little grated cheddar cheese. Bake in 350 degree oven for 20 minutes.
Great as a side dish or snack. they Warm up great in microwave and taste good cold.

Welcome Malapert and thanks for the recipe..I'm vegetarian but I'll try it without the bacon. I have some portabellas in the fridge so I might have one stuffed for lunch.

There's no age limit, no number of pregnancies, that says you can't attain your goals. Thanks for the warm welcome! Day #3 and doing great! I had a little bit of a tough time at the grocery store last night (shopping on an empty stomach...baaaad me. lol) but I persevered and waited until I got home to have some baked chicken and green beans. Yum. :)
The foods and recipes are coming back to me, little by little. I need to dig out my Atkins book. One question...what would be a good vessel for a dip, say...spinach artichoke dip?? I find that I'm not craving the sweets but I DO crave crunch. And I have a weird food allergy (oral allergy syndrome) that forces me to cook all my fruits and veggies so things like celery don't work for me. Are there any low carb cracker-like things? Or any other ideas?

how do you feel about pork rinds? I use them as chips and for dips 0 carbs

Malapert - welcome! If you swing by the low carb site that is attached to this forum - Low Carb SiteI have hundreds of recipes there as well as hundreds of product reviews. Right this very second I'm eating RW Garcia flaxseed soy tortilla chips, they are great and healthy.
