Because of my passion for helping animals I have recently become convicted that it's not right to eat their flesh. The more I read about animal fats being bad for me, and my paternal family has a huge history of heart trouble, a vegetarian lifestyle seems appropriate for me. I've been skimming through the site and find some very interesting reading. I'm especially interested in the one about eating for $150 a month, always looking for ways to save money.

Hey...how are you? I seem to follow you right around these boards don't I hahahhahahaha I don't think I'll have trouble sticking to it, it's a conviction I've come to based on my feelings about how animals are treated when their purpose is food for us. I've already purged my freezer and gave the stuff to a friend for her freezer and I've purchased enough to get me through the end of the week when I get paid and can shop for a couple weeks worth of groceries. I'm going vegan...but I'll still reduce the amount of dairy I use. This should help lower my cholesterol too...a point of issue with my dr. Nice seeing you around. Maybe we should get back to our walking... smile

I'm not sure where I found this recipe. It's slightly adapted from one I found on the internet.

Vegan Banana Bread

2/3 cup almonds
2 medium sized red apples - peeled, cored, and sliced
1 1/5 cups water
4 T flax seeds
3 1/2 cups unbleached white flour
1 cup sugar (I used less)
1 cup agave nectar or honey
2 tsp baking soda
1 tsp salt
2 cups mashed banana
1/2 cup vegetable oil
2 cups chopped nuts (I used chocolate chips instead)

preheat to 325.
grease two loaf pans

in a blender, blend first four ingredients until smooth

combine remaining ingredients in a mixing bowl.

Add blender contents to bowl and stir until combined

divide mixture into two greased loaf pans and bake for one hour and 15 minutes or until inserted toothpick comes out clean. let cool for 30 minutes.

Welcome to the world of vegetarianism. A very healthy lifestyle and truly not that hard to maintain. I have chosen this lifestyle because of the heinous practices of factory farming. I agree - Jason's site is wonderful. A few suggestions from someone that has been a vegetarian for about 40 years - For quick meals Morning Star Farms products are great, Boca products are good too but I personally don't care for their original Boca burger - maybe it tastes too much like a real burger - I find it bland and it needs lots of condiments. I also find Silk plain soymilk works just like milk - the flavored is rather intense but good on its own.

Good luck exploring your new project.

A quick note for those of you who may not want to go veggie but do not want to contribute to the factory farming practices - many small local farms are offering free-range meat, poultry and eggs. Contact your local farm bureaus or coperative extensions or check out craigslist farm and garden section.

Susan, thanks for the information...but I avoid soy as much as possible because of my thyroid condition. I have found soy free meat substitues though. I still eat cheese, eggs and milk, just no meat, poultry or seafood or fish. I get my eggs and cheese from a local farmer but milk I still get from the grocery store.
