Brenda, I loved your poem!

Those taco's were good! I started out making taco's in my teens, and slowly over the years, I've gotten the meat now just how I want it. I fry up the hamburger and add in a chopped up onion, lots of fresh minced garlic, and a whole peeled, raw potato, diced up. (I like adding the potato because it adds extra volume while helping you to consume less meat.)

I also add in beef bouillion granules, lots of fresh ground pepper, about 2 tablespoons chili powder, depending on how much hamburger you're using, and extra salt if needed. Then I put a small amount of water in the pan (I always fry my meat in a cast iron skillet), put a lid on it and turn the heat down. I let it cook while I'm frying up the tortilla's. My friend says my taco's are the best, but I honestly love any and all taco's!

Haven't met a taco yet that I didn't like! I am thinking about getting this metal thing where you would bake the tortilla's instead of frying them. You spray them with cooking oil, drape them over these metal things and pop them in the oven. It would cut out a lot of calories. I'm seriously considering getting one.
As for my anxiety problems, yes, it can be horrible at times. A few weeks ago, I felt like I was on the verge of a perpetual panic attack at any given minute, which went on for over a week, and it was horrible. The last day of work I felt a tremendous weight come off my shoulders. I will probably work there again next year and proceed to do what I have done over the past years. Tell myself, "It's only 2 1/2 months. You can do anything for 2 1/2 months!" And then lean very heavily on God!
I am now in the process of getting myself on an eating plan. My friend's daugther is getting married in June, so my friend and I went shopping last Friday for our dresses. Cyndi and I have been best friend's since we were 10 years old, so we can act pretty silly at times. Finding our dresses, or as Cyndi called them, "Parade Floats", was an unforgettable adventure!

We had so much fun! We each tried on 4 dresses and we both found our favorites out of those 4. And then we did something that neither of us have ever done before. We decided we needed girdles!

What a hilarious ordeal! Cyndi said she could hear me huffing and puffing as I was trying to pull mine on and she thought I was going to start cussing! I kept muttering, "This is a joke!" and she was just in hysterics. I finally got my girdle on and proceeded to tell her that I hoped there would be no gusty winds on the wedding day because should my dress get blowed up above my knees, people would see blubber hanging out below the girdle line! Yes, I got the longer girdle! But the good news is that there will be no more jiggle in my walk away! Man, that stuff holds you firm!

What an experience!!!
Lynne, glad you had a good time at the Mexican restaurant. Last week when my boss took everyone out to dinner, I got 2 strawberry daiquiri's and they were so good! Filling, too.

Well Laura, I hope you're starting to feel better. We need you in here to play with us! Isn't the same without you!
Well, I've got laundry and a little grocery shopping to do later on, but I'm just going to enjoy kicking around the house for a while this morning. Haven't been able to do that in a while on a Monday!
