Tonight, now that our house is full of delicious salad items, we both had a large salad! Bob chopped up the carrot into slices, the cucumber into circles, so we have tupperwares in the fridge full of many little salad makers.

We had lettuce, spinach, cucumbers, tomatoes, carrots, pine nuts, black olives, mushrooms, white cheese, orange cheese, green peppers!

Very, very tasty. I definitely recommend the practice of pre-cutting a variety of tasty items up so that future salads can go quickly!

Having all the various things cut up into little pieces in Tupperware is being REALLY helpful!!

Tonight we had another pair of salads and they were SO good. Fresh lettuce and spinach, chopped up egg, green pepper, mushrooms, bacon bits, tomatoes, cucumbers, two types of cheese, black olives. I had a red wine vinegar dressing on it this time. You mix it up a little each time so it's always tasty!

Bob is eating FAR more salads now that we're doing this, which is good!

We love brussels Sprouts too, especially since we began roasting them. Just rub them with olive oil and sprinkle with salt and pepper and roast in a hot (400 degree) oven for 20 - 30 minutes. I've converted several brussels sprouts haters into lovers with this simple recipe.

That's a great idea too Martha! A lovely alternative to microwave steaming, when you have the time for the oven! The more options, the better!

I had tilapia and broccoli today, so no salad.

Yes definitely a key is not to make the SAME salad every day. Have a bunch of topping options, a few salad dressings you enjoy, and mix it up.

If you set up the tupperwares at the beginning of the week with all your little fixings, it's quite easy!

Yes exactly! I just got some raisins and they were SO good on my salad. I was loving them. I know raisins are naturally high in plant sugar, but if you sprinkle just a few on top of the salad they add a cool sweetness to it.

I didn't have a salad today - we ate out Mexican - but my beef burrito came with a ton of lettuce, tomato etc. as a side rather than beans. It was GREAT. So that was like a built in salad to the dish! We even made a point of talking with the waitress and telling her how much we loved the veggies on the side. Usually they have beans there which we don't eat, so this was a delicious alternative. Hopefully they'll do this all the time going forward!

Salad for today - lettuce, cheese variety, tomatoes, pine nuts, pecan bits, olives, bacon bits, ranch dressing. I definitely recommend having some sort of a "lettuce keeper" for your fridge to help it last longer! I have one from Tupperware.
