I try to eat a salad every day. They're full of veggies, very good for you, filling and low in calories and carbs!

Today's salad:

Lettuce, bean sprouts, white cheddar, yellow cheddar, olives, pine nuts, bacon bits, Buttermilk Ranch. We're out of tomatoes somehow! I can't wait until summer when my tomato plants are in full bloom.

Carbs: very low. The dressing is only 1g of carbs and most of the rest is pretty near zero. Pine nuts are high in fiber and very good for you!

Lisa,

This salad sounds good. As of yesterday (3/19), I began the low carb lifestyle. I read your Low Carb First 2 Weeks ebook to get started and still am working my way through what I can eat and what to stay away from.

I am a huge fan of bread and potatoes so this is a drastic change for me, but I have gained so much weight over the years, ache all over, and feel 10 years older instead of the 10 years younger that I have always felt.

So, I am hoping the change in diet and way of eating will help reverse the curse, so to speak.

So much to read, but I am enjoying the variety of recipes and foods. I do love cheese, eggs, and veggies so that helps a lot.

Thank you for all the information you have shared.

Salads are really SO good for you! Vegetarians, vegans, low carb, low fat, everybody recommends eating salads regularly. It is the one constant of all healthy eating smile

Edie - it's great that you're getting started! If you adore bread, I want to encourage you that low carb is NOT about "no carb". It is always about moderation. We are helping you get rid of the junk food in your life - the white bread, the piles of pasta with no veggies on the plate, that sort of thing.

So to start with, yes you cut out bread and potatoes altogether, to help you wean off that sugar-rich diet your body has gotten used to. But over time as your body becomes more healthy you can start to integrate HEALTHY breads - high fiber breads - the type of bread people used to eat all the time as "normal bread" smile

Potatoes have always been meant as a high-calorie food for hard working farmers, so once you get to the point that you're active and exercising and in good shape, you can certainly eat potatoes for energy before you go on a fun bike ride!

It's all about moderation and balance smile

Thanks Lisa, that makes sense. And Walking Granny, that is good news. I'm tired of being tired and really looking forward to getting healthy again. Living in MI and being a caregiver has added way too much weight onto my body, but it is getting very close to spring and it's much easier to get outside and walk! Then I can be a "walking granny" too! smile

I forgot to post yesterday. My salad then had lettuce, tomatoes, white cheddar, yellow cheddar, macadamia nuts, pine nuts, bacon bits, olives and buttermilk ranch dressing.

ok...that settles it...I'm definitely doing a salad every day. Yours sound so good. Today I didn't have one and I really miss it. I ate real bad...basically just meat and water working on math homework most of the day and didn't want to stop to do anything too much as far as cooking. Tomorrow will be more balanced..it's off to bed now...

Meat and water are not a healthy diet smile
