Do you have any special meatless dishes for Lent to share?

I made a pasta cici for Caritas tonight - that is a favorite vegetarian dish.

Share your ideas.

I'm not Catholic but I dated a guy who was. Every Friday during Lent, his church would open up a soup kitchen with meatless soups. I would make a huge pot of soup to take. My most well-received were Clam Chowder, Corn Chowder and Baked Potato Soup.

The Baked Potato Soup is best with crumbled bacon on top but I just omitted it and used cheese, green onions and sour cream on top.

Hi Lori. My parish has a Wednesday soup and study night. The cooks put together a good soup and those who come will bring bread to share.

I love the three soups you mentioned in your post. I tried Campbells single serving soup recently - tomato parmesan bisque. That is very good too so I need to figure out how to make a big pot of that from scratch.

Growing up we ate a lot of fish, macaroni and cheese, eggs and grits, shrimp marinara on speghetti. Back then Mom would drop in at the fish market (we didn't have the variety like the supermarkets today) and pick up something fresh for dinner. Those were the days.
