This became one of my favs to eat while recuperating from surgery. You can make ahead and store in the freezer and they go straight from freezer to oven or toaster oven!

FOIL FISH WRAPS

Get a medium sized square of heavy duty foil and sprinkle on a few drops of Extra Virgin Olive Oil. Spread evenly.

Place a fish filet of your choice (I like tilapia, grouper and salmon) in the center of foil and sprinkle with herbs of your choice and freshly ground black pepper.
Slice a lemon into thin rounds and place on top of fish.

Wrap fish up with the foil into a packet. Not too tight. And place on baking sheet. I usually do about four of these. Bake in preheated 350 degree oven for 10-12 minutes depending on thickness of fish filet.

You can pop the finished packets in the freezer and pop them in the oven while still frozen! They turn out beautiful every time.

Serve with brown rice and veggies.

Here is one of my fave salads to go along with a main course, it is really easy to make and it smells so fresh and delicious

Little radish salad with scallion

30 little radish
� of scallion
2 spoons of olive oil
Apple vinegar
2 tablespoons of minced dill
2 tablespoons minced parsley


Slice little radish and add minced scallion, parsley, dill. Stir all the ingredients and add the olive oil and pour some apple vinegar and stir again.

You see, it is easy and I guarantee you will love it....if you like dill smile
