Every new year brings most people a new year's resolution that requires them to start eating better. An article on Scott Common Sense called The Lighter Side of Cooking offers healthy alternatives to everyday cooking staples like butter,cheese,and eggs. What healthy alternatives do you cook with?

I use coconut oil to cook with and we use low fat, low calories foods too when that is an alternative.

We've been eating more grains and fruits and veggies too and less meat. I like tofu in my recipes, but my husband can't get past the NO meat thing.

I am trying to eat more fruits too and I am really trying to focus on exercising everyday. Scott Common Sense has a cool calorie counter on their website that helps you figure out how many calories you are burning by doing things like cleaning the house.

We've had this debate at work on the price of eating healthier and the cost of fruits and veggies in the supermarket. Even though in the long run it may be healthier, in the short term it's very costly. $4.00 for a bag of apples...ouch..
Any suggestions for healthy eating on a budget?

Best time to buy fruits...is on sale! Since I have never seen coupons for buying fruits, you just got to check ads to see when the fruit goes on sale. Are you into snacking on cereal/protein bars...or only fresh fruits?

I'm more of a fresh fruit type of gal. I LOVE fruit salad, though once mixed with sour cream, coconut, raisons,etc...it might not be as healthy....lol.. I loved when we lived in Rochester New york, they had an outdoor farmers market where you could pick up baskets of fruit for a dollar. They have a farmers market here to, but they tend to be expensive. We go through starts and stops I'll buy fruit and the kids will eat if for awhile so I'll by it again and then they won't eat it anymore, thereby wasting the money.
The problem with the cereal/protein bars is that very seldom can I eat just ONE...

We try to eat according to guidelines of the Mediterranean diet -- lots of vegetables, whole grains, beans with smaller amounts of fish, poultry, meat, and dairy. I cook almost exclusively with olive oil and try to avoid anything overly processed.

About eating healthy on a budget-compare the cost of a bag of apples to the cost of a bag of chips, a case of soda or box of cookies. If you do buy the apples and don't buy the chips as a snack, then the apples aren't outrageous in price.

I belong to an organic food coop and we get a big bin of locally grown, organic fruits and veggies every other week for $50. I get bags of apples, oranges and pears in those all the time and I don't have to buy much at the store.

It's harder this time of year but check out farmers markets for deals on locally grown produce. It's usually cheaper and you're supporting the local growers, not a grower in a foreign country.
