Couldn't resist this post because my husband's uncle flew in from Texas and he told me that one of his favorite sandwiches is an onion sandwich. I love tomato sandwiches myself, but because I do love onions, I tried an onion sandwich too.
The only thing is that onions can be strong and acidic so I recommend using Vidalia sweet or mild red onions. Peel and soak in either milk or water to remove some of the bitterness. At least for a half hour but some restaurants soak onions overnight.
Thinly sliced onions, mayo, salt and pepper. Sometimes, toasted bread. Good. But I think it's better when the onion doesn't take centerstage. *shrug* Just my own tastes, I guess...
