I've not been a lifelong fan of leafy green veggies--cooked, that is. I will put most anything raw in a salad. Love wilted greens with mustard, leafy lettuce, radishes, green onions!

But, I want to eat more of the cooked kind--and I typically snarl my nose at cooked greens. I do love spinach and often saute it or put it in all sorts of dishes. Recently, I've become a fan of Swiss chard sauteed with a bit of garlic, olive oil & balsamic.

I also have tried collard greens at a local BBQ restaurant and really liked them.

So, I'm looking for some help in learning to eat/prepare more of these. Anyone have any recipes, cooking methods, etc. to share--what's your favorite green & how do you cook it?

Jason, I know you'll have some info here---I saw greens on your holiday menu! grin

Try a nice saute in some olive oil and your favorite seasonings.

A lot of times I see people work with greens and they will use water and boil them. I think this method dilutes the beautiful flavors in the greens. Try it out starting with some onion and then add a marinade sauce to finish it all off. wink

Here is a semi-Persian variety of spinach:

Thaw a small packet of frozen spinach. Squeeze in a clean kitchen towel to remove as much excess water as possible. Thinly slice and saute a medium red onion in olive oil till light brown. Add a couple of cloves of garlic (minced). Add spinach and continue to saute till fully cooked. Remove from pan and mix into 1 cup of regular, unsweetened yogurt. Use as a dip or a side dish.
