One of my clients in the real world is the Pickle Barrel restaurant chain and they have a lovely flavourful veggie burger created by Rose Reisman. There is a sauce they use with the burger but I'll simply give you the recipe for the veggie burger.Enjoy!
1/2 can canned corn kernels, drained 1 can chickpeas, drained and rinsed 1 cup coarsely grated carrot 1/3 cup chopped basil or cilantro 1 egg 1/4 cup tahini 3 Tbsps freshly squeezed lemon juice 1/4 cup bread crumbs 1/4 cup chopped green onion 1 1/2 tsp minced garlic pinch salt and pepper
1. In a small pan saute corn for 5 minutes over medium heat until lightly browned. place in processor. 2. Add rest of ingredients and pulse until mixture comes together. NO NOT PUREE, you want some texture. 3. Form into 4 patties. 4. Heat 1 Tbsp of oil in pan over med/low heat and saute patties on both sides until browned and warmed through.
