I am a holisic health coach specializing in permanent weight loss. I came up with these for my clients. They are dairy free, whole grain, and naturally sweetened, but absolutely delicious! If you don't tell anyone they are healthy they won't know.

Dark Chocolate Fudge Brownies
1/3 cup extra virgin olive oil
3 oz dark chocolate bar, chopped (about 75% cocoa content). I like Endangered Species brand Intense Dark Chocolate with Cocoa Nibs.
1 cup maple syrup
1/2 teaspoon pure vanilla extract
1/4 teaspoon salt
� cup unsweetened cocoa powder
2/3 cup whole wheat pastry flour
2 organic eggs
Optional: 1 handful grain sweetened chocolate chips, or 1 handful chopped chocolate from a dark chocolate bar (such as 75% cocoa).

Preheat oven to 325 degrees. Grease an 8x8 inch baking pan with oil and lightly dust with flour.

In a saucepan heat the oil and chocolate over low heat, stirring constantly until fully melted.

Remove from heat.

Pour the remaining ingredients, in the order listed above, into the pot. Stir together with a wire whisk, until just fully incorporated, do not over mix.

Using a spatula, pour batter into pan and bake for 30-35 minutes.

Let cool before cutting.

Nice recipe...Most people associate chocolate with unhealthy, but chocolate has some great nutritional benefits!
