When it's a balmy 90++ outside at 6pm, what are YOU preparing for dinner? And when it's a sandwich for lunch or for dinner - which is your favorite to beat the heat?

I probably eat my heaviest meal during the summer months at breakfast time. Then, it's something light for lunch like soup and salad. Even though I usually don't want to eat at all - I will prepare a light supper like a tuna or chicken salad. Sometimes a cool protein shake is all I can manage.

My lunch sandwiches are usually fruit sandwiches with yogurt or a light cream cheese spread. My dinner sandwiches are usually chicken, tuna or cucumber salad sandwiches - light on the bread.

We are having Catfish Po-Boys tonight and they will be DELISH!
Sliced tomatoes, lettuce, capers in mayo and a soft hoagy bun with the virtuously baked (not fried) catfish in there too.
Mmmmm.
After working outside in the(very hot)garden, dinner can be ready very quickly if u have the fish ready and thawed. YUM.
