Hello everyone! This week's Reader Recipe of the Week comes from Laurel, and looks wonderful! Thank you, Laurel!

Eggland's Best Baked Apple French Toast
Serving Size: 16
Preparation Time: 30 minutes
Cook Time: 40-50 minutes
Serving Ideas: Breakfast & Brunch

Ingredients

3 large green apples
1 stick (1/2 cup) butter
1/2 cup brown sugar
12 oz. cream cheese
12 slices firm bread
8 Eggland's Best eggs
2 cups milk
2 tablespoons vanilla
cinnamon

Preparation Method

1. Set rack in lower third of oven and preheat oven to 350? F. Butter a 13-by-9-inch pan.

2. Core and cut the apples into thin wedges, leaving the skin on (if desired).

3. In a skillet, melt butter with brown sugar and one tablespoon water. Add apples and cook, stirring for 2 to 3 minutes.

4. Transfer cooked apples to the baking dish; allow to cool.

5. Cut cream cheese into cubes and arrange evenly over the apples.

6. Cut slices of bread in half diagonally and layer over the apples to cover the whole dish.

7. In a large bowl, beat together Eggland's Best eggs, milk, and
vanilla.

8. Pour the egg mixture over the bread, taking care to dampen all the bread.

9. Sprinkle with cinnamon. The dish needs to be baked for 40 to 50 minutes, until golden and puffed. Let cool 10 minutes before serving.

Note:
To lower total fat, use low fat milk and low fat cream cheese.

Oooooo, that sounds really bad!

Can you fix it the night before and let it soak in the fridge overnight, then pop it in the oven the next morning? I've seen some recipes where you can do that, but I didn't know if it would work with the cream cheese filling.

Just wanted to let y'all know that I made this, this morning - and give you the run-down on results.

The 5 yr old didn't like it.

The 10 yr old said she didn't like the cream cheese part, bbut loved the apples and french toast - so could I just make it w/out the cream cheese next time.

The 16 yr said he would gladly finish the 5 yr old's and the 10 yr old's portion that they didn't want... and then wanted to know if he could get more. (So about 3, maybe 4 helpings - I guess he liked it, LOL!)

Hubby says definitely make it again.

I really liked it, too. It is not sicky-sweet like the cream cheese stuffed french toast they serve at IHOP. It just came out kind of creamy and gooey.

Here's another recipe my kids love this time of year. I got it from a Bisquick box a couple of years ago and they loved it! Hubby is crazy about it, too. And we always have the syrup left over, so I put it in the fridge and use it on frozen waffles, pancakes, even as a sauce for bread pudding one year. It is really the Apple Cider Syrup that makes this recipe.


Apple Cinnamon Waffles with Cider Syrup
Prep Time: 20 min
Total Time: 20 min
Makes: 6 servings

Cider Syrup
1 cup sugar
3 tablespoons Original Bisquick� mix
1 teaspoon ground cinnamon
2 cups apple cider
2 tablespoons lemon juice
1/4 cup butter or margarine

Waffles
2 1/4 cups Original Bisquick� mix
1 1/4 cups milk
2 tablespoons sugar
2 tablespoons vegetable oil
1 teaspoon ground cinnamon
1 egg
1/2 cup finely chopped peeled apple

1. In 2-quart saucepan, mix 1 cup sugar, 3 tablespoons Bisquick mix and 1 teaspoon cinnamon. Stir in cider and lemon juice. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute; remove from heat. Stir in butter.
2. Heat waffle iron. (Waffle irons without a nonstick coating may need to be brushed with vegetable oil or sprayed with cooking spray before batter for each waffle is added.)
3. In large bowl, stir all waffle ingredients except apple until blended. Stir in apple. Pour batter onto center of hot waffle iron. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle iron.
4. Bake about 5 minutes or until steaming stops. Carefully remove waffle. Serve with syrup.
