Does anyone know where spelt, in whole grain, can be purchased? This is known as "farro" and is the cracked variety. If uncracked it can take 8 hours of cooking, similar to whole grain wheat berries, so a cracked variety is preferable to today's cook (who has no time for that kind of lengthy food prep). Have found a small quantity, with finely chopped red and green peppers added in like a pilaf, but want to be able to add spelt to our diet as an additional staple to risotto, polenta, brown rice, wheat berries, etc. It's a prodotto d'Italia, so it seems that distribution here in USA is quite limited for bulk purchase. Any ideas on source?

Hi,

Try checking a homebrew store in your area or an online one such as beer, beer and more beer or perhaps King Arthur Flour.

They should have it.

Does spelt have a flavor, or is it just for texture? Is it a grain or pasta?

Spelt is a grain and it is in the wheat family. It has a nutty flavor.

Spelt is good for a change of pace. For anyone who has the Martha Stewart Baking Handbook, there is a wonderful recipe for Spelt Crescents on page 95. Here is another good recipe from the Martha Stewart website for Chickpea, Tomato, and Spelt Soup. It is perfect for a cold, winter day.
