Hello everyone. My name is Amy Daniels and I am the new editor of the Southern Cooking site here at Bellaonline.

I am excited to be sharing my cooking knowledge with all of you and hope to receive some feedback as well.

In fact we can start that now. Is there anything in particular you would like to see me write about in the coming months?

I'd love to see a recipe for hushpuppies too! I've lived in many places in the south where you always find them with meals and then when I lived in Oregon I missed them. Here in Texas we get them a lot in restaurants but I'd love to make my own.

I only cook collard greens since my southern family has been eating them before I was born. But your instructions left out tearing them off tough center rib and tearing into small pieces before all the washing. Rendered bacon with the fat can also be used. To cut fat and cholesterol, Hamhocks can be boiled day aheard kept in fridge and fat easily skimmed off before cooking Dried beans not frozen boxed (not the same) Also can be used for greens.
