My hubby and I visited a local Chinese restaraunt recently and tried this wonderful dish. I have been looking online for over an hour unsuccessfully for a recipe for this and finally landed on your forum. I hurried and registered so that I could post and ask for help in finding this. It had no meats that I could detect but it did have the rice noodles, cabbage, carrots and possibly bean sprouts and mushrooms? Do you have anything similar? I would appreciate your help so much. Hi Trish-

The dish that you described is wonderful and the noodles are also known as Mai Fun, rice noodles, rice sticks or vermicelli noodles. I have made an excellent recipe which is on the back of a "Hokan" bag of Py Mai Fun which I have copied for you here:

1 package Hokan Rice sticks (Py Mai Fun)
1 can (8oz) sliced water chestnuts
1 can (8oz) bean sprouts
1 can (8oz) bamboo shoots
2 tbsps oil (I find that peanut works the best)
6 scallions, chopped
1 medium sweet red pepper, diced
4 tbsp soy sauce
2 tbsp tomatoe paste
1/2 tsp salt
3 tbsp white wine
6 tbsp chicken broth

1. Soak the rice noodles in warm water for 20 min.
2. Drain all canned vegetables.
3. Heat the oil on high and cook the chestnuts, bean sprouts, bamboo, scallions and red pepper for about 2 minutes.
4. Add the pre-soaked rice sticks and the remaining ingredients and cook for 2 minutes. Makes about 4 servings.
