On October 2 Nigella Lawson started another food show called Nigella Feasts. It's on the food network. Anyone see it?

Yes, Moe, I have caught her show, and just last night found her online site, as well. Many nights I'm sleepless due to pain, and rather than stay in bed and suffer I prefer to just - DO SOMETHING. Anyway, I was looking for a recipe using roasted garlic and chicken, and Nigella has one that also includes lemon. Makes me salivate just to think of it!

If I can find someone to take me for groceries I'm definitely getting the ingredients for that. Even better, it looks quite easy to prepare, definitely a plus for those like me who can't do too much.

Go on and look for that recipe on her site, everyone. Bet you'll find some that tempt your taste buds too!

Hello to my fellow trivia buff!

Here is a couple of easy recipes - I didn't say low cal or carb, lol, just easy! Enjoy and let me know if you want more. I used to cook and loved it, now as a full time student (mid-life crisi [color:"purple"] [/color] s) I look for easy and fast recipes (cheap is good too)

Soapingdiva

Super Easy Turkey Roll
This is too easy, and soooo good! A crockpot is a must. The only hard part is removing the net from the cooked turkey, if you let it cool for 10 minutes, then use scissors to snip the net it is much easier.

Ingredients:
1 - frozen turkey breast roll (boneless) thawed
1 - can whole cranberry sauce
1 - jar orange marmalade

Directions:
Put the turkey roll in the crockpot. Dump the can of cranberry sauce and the jar of orange marmalade over it. Cook on low for about 8 hours - you will know when it is done.

This is great served with stove top stuffing, or the refrigerated "instant" potatoes and a veggie. Super quick and easy.


French Onion Sandwiches
These are great!
Yield: 4 servings

2 tablespoons butter or margarine
4 (4 ounce) beef cube steaks
1 medium onion, sliced and separated into rings
1 cup beef broth
1 tablespoon cornstarch
2 teaspoons Worcestershire sauce
1/8 teaspoon garlic powder
Dash of pepper
4 (1-inch) slices French bread, toasted
2 (1-ounce) slices Swiss cheese, halved

In a large skillet melt butter. Add steaks and cook over medium-high heat for 2 to 3 minutes on each side or until done. Remove from skillet, reserving drippings.
Cook onion in drippings until tender.
Combine broth, cornstarch, Worcestershire sauce, garlic powder and pepper. Add to skillet. Cook and stir until bubbly. Cook and stir 2 minutes more.
Place steaks on bread. Top with cheese and onion mixture.

Here is another one. I got this in an e-mail a few years ago, I doubted it would work, but did try it. I LOVED it - it works and is so easy, and almost no clean up! It does taste slightly different as you are not cooking it in a "fat", but it is yummy.

Soapingdiva

ZIPLOC OMELET

(This works great !!! Good for when all your family is together. The best part is that no one has to wait for their special omelet !!!)
Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.
Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake/squish to combine them.
Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc., just whatever you like in your omlet. Each guest adds prepared ingredients of choice to their bag and shakes. Make sure to get the air out of the bag and zip it up.
Place the bags into rolling, boiling water for 13 - 15 minutes. (Be sure the pot is full of water before you start, if not it will boil dry quickly) You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.
Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed.

Hi Soaping Diva, and you too Moe.

I haven't been online for quite awhile, and have to tell you that I was thrilled to find these yummy looking easy recipes! I'm not able to stand for more than 10 minutes, or so, and so am always on the lookout for easy things to cook - I'm sick to DEATH of frozen.

I've already sent these out to a friend who has five kids and runs a business out of her home with her husband.

Yes, please - I would LOVE more easy recipes!

Hey SweetSpirit - good to see ya - how did ya like that calendar - wasn't it beautiful? I am not around much now either - back at school. Here are a couple of more recipes for ya!

Hamburgers in Tomato Sauce
Too Easy

Take ground beef and make tiny patties out of it - think smashed meatball. The amount/number depends on how many you are feeding, I usually cover the bottom of a skillet. Sprinkle salt or your favorite seasoning over skillet bottom, add patties and cook till done turning as needed. Remove patties from pan. Add 1 small can of tomato sauce - the ones with added herbs or garlic are great, and 1 small can of tomato paste, add water as necessary. When sauces are blended and thick add patties back to pan, simmer for a few more minutes, season to taste and serve. I usually serve with mashed potatoes and a veggie.


Italian Beef Sandwiches

Great to cook in the crockpot, you can cook it in an oven also but your cooktime will be shorter.

Beef Roast (doesn�t have to be an expensive one, I usually do a 3 - 5 lb one)
1 teaspoon salt
1/4 teaspoon black pepper
large onion
1 can beef broth

1/2 teaspoon oregano
1/2 teaspoon Italian seasoning
1/2 teaspoon garlic salt
1/4 teaspoon basil
1/2 teaspoon seasoned salt

Put roast in crock pot, sprinkle with salt and pepper, pour beef broth over, you may also need to add � to 1 can of water. Cut the peeled onion in 2 - 4 chunks and throw it in. Cook on low all day. Shred the beef, remove the onion from the pot, but the beef back into the pot with the seasonings and simmer at least 30 minutes. Serve on thick rolls with pepperocinis.

Deb's Famous Ham Sandwich

Ingredients:
Sliced smoked ham
Sliced Swiss cheese
Fresh sandwich buns (Hamburger)

Sauce:
1 c. - melted butter
1/2 c. - mustard
2 T. - Poppy seed
1 T. - Accent
chopped onion to taste

Directions: Mix all sauce ingredients together and heat until warm. Layer ham & cheese on bun. Spoon a small amount of the sauce on each sandwich. Wrap sandwich in foil, place in 350 oven for 15 minutes, or until cheese melts.

Ok, here is a dessert - definetly not lo-cal

Mississippi Mud Cake

A great easy dessert

Ingredients:
1-plain devil's food cake mix
8 tablespoons butter melted
1 1/2 cups buttermilk
2 large eggs
1 1/2 teaspoons real vanilla extract
1 jar marshmallow cream (small works but large is yummier as it gives you more to "sample")

Frosting:
8 tablespoons (1 stick) of butter (ya gotta use real butter)
4 tablespoons unsweetened cocoa powder
1/3 cup milk or a smidge more if needed
4 - 4 1/2 cups confectioner's sugar
1 cup chopped pecans

Directions:
Grease a 9x13 pan. Preheat oven to 350.
Mix: dry cake mix, butter, eggs, buttermilk, and the vanilla until well blended. Pour batter into the prepared pan, smooth it down and tap out air bubbles. Bake at 350 for 40 - 45 min. until it springs back when you lightly pressed with your finger.
Remove from oven and immediately spread with marshmallow cream.

Mix frosting:
Melt butter over low heat, stir in cocoa powder and milk. Let just come to a boil stirring. Remove from heat. Stir in confectioners sugar until smooth (I prefer to use a mixer), pour warm icing over cake topped with marshmallow cream. Sprinkle with nuts.

Lemon Fridge Cake
a cool refrigerator cake
Ingredients:
1 - box lemon cake mix 1 - box lime Jell-O
2 - boxes (small) instant lemon pudding 2 - envelopes Dreamwhip

Directions:
Bake cake according to package directions, use a 9 x 13 pan. Cool cake. Dissolve Jell-O in 1 cup boiling water. With large fork, poke holes all over top of cooled cake. Pour Jell-O over so it runs into holes. Let sit in fridge. Make Dreamwhip according to package directions except leave out vanilla. When done whipping pour in instant pudding and fold until mixed. Frost cake with lemon pudding/dreamwhip mixture. Store in fridge

Pink Stuff

Ingredients:
1 small pkg. cherry jell-o 30 lg. marshmallows
1 - 3 oz. pkg. cream cheese 1 c. very hot water

1 pkg. prepared Dream Whip 1/2 c. chopped pecans
1 sm. can pineapple crushed (drain well)

Directions:
Dissolve: jell-o, marshmallows, cream cheese and the hot water. Chill until mixture is almost set, then whip. To whipped mixture, fold in: dream whip, pecans and pineapple. Chill until set and serve.

A friend gave me this one for a Luau we were having - it is now a family favorite.

Pineapple Rice
This is a sweet rice dish that can be
served as a side dish, either hot or cold. It is also a great
dessert if served with cream.

1 cup rice
2 cups pineapple tidbits
6 tablespoons butter (real butter)
3/4 cup brown sugar
3/4 cup pineapple juice

6 servings 40 minutes 10 mins prep

Preheat oven to 350F degrees.
Boil rice.
Place 1/3 of rice in bottom of buttered baking dish.
Cover with half of the pineapple, half the brown sugar, and half of the butter.
Repeat with next 1/3 of rice and second half of pineapple, brown sugar and butter.
cover with last 1/3 of rice and pour over pineapple juice.
Bake covered for 30 minutes.
