This is a great dish for the holidays!

3 c. cooked, mashed sweet potatoes
1 c. sugar
1/2 c. butter or margarine
2 eggs, beaten
1 tsp. vanilla
1/2 c. milk

Combine all ingredients and mix well. Pour into a 2 quart casserole dish. Sprinkle topping over top. Bake at 350 degrees F. for 30-40 minutes.

TOPPING:
1/2 c. firmly packed brown sugar
1/4 c. flour
2-1/2 T. butter or margarine
1/2 c. chopped nuts

Mix well and top the potato mixture evenly.

I love sweet potatoes. I have started just slicing them really thin. I put butter, splenda, and a little cinnamon on them. I bake them until they are soft. Not as bad for me and I get my sweet potato fix.

I just developed a taste for sweet potatoes in the past couple of years. I have discovered that I am picky about how they are cooked and the above recipe is right up my alley. I will have to give it a try!

Yum Yum! I save this recipe to cook for either Thanksgiving or Christmas so it will remain a special dish to look forward to. All sweet potato lovers LOVE it. <img src="/images/graemlins/smile.gif" alt="" />
