I add a Tex-Mex twist to my red beans.....cook pinto beans as usual (if you don't know how, just ask). I'm just assuming all of you southern cooks know how to cook a mean batch of red beans.

Anyway, when beans are about halfway cooked, stir in a small can of stewed tomatoes, a small jar of salsa and dark brown sugar to taste. Add some chopped onion if you wish and a clove of minced garlic.

If you want them hot, add some hot sauce or jalepeno peppers.

That's what we call them.....pinto beans = red beans in this region. lol....

I haven't heard pinto beans called "red beans" - cowboy beans, sure. In my neck of the woods--and TX is a big state--red beans are really red beans and not pintos.

We do red beans (the real red beans) with dirty rice and serve sweet cornbread on the side to tone down the spice.

I don't know where that came from; calling pinto beans "red" beans....everyone around here does. I'm in North Texas on the Red River.

My DH refers to anyone living north of Austin as a "northerner."

We're near the junction of the Comal and Guadalupe Rivers in south-central Texas. Our major food influences are German, Mexican (borders only 2 hours away), and Cajun (just a short ride on I-10 east puts you right into Louisiana).

Mexican foods are a big influence here also. There are more mexican restaurants around this area than any other cuisine I think. We also have a good choice of Chinese restaurants and being on the biggest lake in Texas (Lake Texoma), we have some good seafood places.

Most good home cooks I know in the area cook some of each of these foods also.

If you call pinto beans (which are spotted/speckled/streaked light tan beans) red beans, what do you call red beans?
