Roasted Cajun Potatoes, but here is a simple recipe for making boiled Cajun style potatoes. It is easy to adjust to make as many servings as you like. You can remove the potato skins after boiling or leave them on. The recipe below calls for red potatoes but you can use white or russets or my favorite � Yukon gold � peeled or not. If I made this with russets or another heavy skinned variety, I would probably peel them before cooking.
5 � 6 red potatoes, scrubbed clean and cut into 1-1/2 inch cubes
1 teaspoon sea salt**
2 tablespoons butter, cut into small pieces
Cajun Seasoning to taste
Black pepper to taste
2 tablespoons Italian (flat leaf) parsley, minced and divided
Add the potatoes & sea salt to a pot of boiling water**. Cook until the potatoes are just tender � about 15 � 20 minutes. Drain the water off and return the potatoes to the pot or a large bowl. Add the butter, the seasonings, and 1 tablespoon parsley to the potatoes and toss gently until the potatoes are coated. Add additional butter and seasonings to taste.
** You can add chicken stock base or bullion to water OR add a teaspoon of Zatarain�s liquid crab boil concentrate in place of all or part of the salt.
