If you're from the south, you probably have a great okra recipe, don't you? I'd love to know how other Southerners cook their okra. <img src="/images/graemlins/smile.gif" alt="" />

Here's a favorite recipe handed down from my grandmother. She called it GUMBO, but it's not a true gumbo. It's a skillet fried dish and delicious (if you like okra that is)


MAMA'S GUMBO

desired amount of okra, sliced in rings and breaded
can of stewed tomatoes
can of corn
bacon drippings
onion
1 clove garlic or use garlic powder

Over med-high heat, heat bacon drippings in an IRON SKILLET (a must for this recipe). <img src="/images/graemlins/smile.gif" alt="" /> Add battered okra and fry until as brown as desired. There should not be any bacon drippings left in the pan, but if there is, pour excess off.

Add onion, garlic, corn and tomatoes. Lower heat to medium/moderate heat and continue cooking (stirring occasionally with spatula) for 15 minutes or so. Salt and pepper to taste and serve.

Firecracker Okra

at least 1 lb of fresh or frozen sliced okra
2 c House Autry Mildly Hot Breader
1 c self-rising flour
1/3 to 1/2 tsp of your favorite lemon pepper
1/2 c milk
kosher salt

1.)blend breader, flour and pepper well.

2.)dip okra into milk, then into breader mixture

3.)fry in hot oil till crispy/brown and apply a pleasing amount of salt immediately

enjoy!

(variation - use 1 jar pickled hot okra, sliced into rounds instead of the fresh or frozen - this is an unusual appetizer that will get raves with drinks - especially Hurricanes or margaritas!)

What is House Autry Mildly Hot Breader and where would I find it? I assume it's a batter mix? I've not heard of it around here. If I can't find it, what would you recommend for a substitution to get the same or similar flavor?

House-Autry is a milling company in North Carolina. They have a wonderful range of breaders and batters.

If you can't find it at your local grocer, ASK for it...Remember - in the grocery industry, when it comes to customers, the "squeaky wheel gets the grease"...so if one grocer won't carry a product, keep asking others till you find one that will accomodate your request.

In regard to House-Autry Mildly Hot Breader, it is definitely worth the trouble.
I have used these products for years and highly reccommend them as do many Southern cooks, magazines and newspapers.
