Ok, I just discovered the best noodles ever, they're low carb/low cal, basically low everything, and surprisingly good. They're called Tofu Shirataki noodles, I bought the brand House Foods in a fettuccine shape and was very impressed.

An 8 oz bag has:
1g fat
30mg salt
2 Net carbs(plus 4g fiber)
2g protein

After looking for some recipe's online I found some and combined with the ingredients I had in my house I mixed:
1 package of shirataki noodles with about a tablespoon of crunchy peanut butter, soy sauce to taste, crushed garlic, frozen peppers and frozen chicken.

It seriously took me 10-15 minutes to make and was delicious.

I love asian noodle dishes and Im happy to finally be able to make an extremely low carb option.

Has anyone else out there tried these?? Have any ideas?

I tried the spaghetti type and I was not impressed but I guess it�s also because I used the no carb spaghetti sauce I have the fettuccini one and I have a low card Alfred sauce I will try. I bought it at this low card store by century city on Pico Blvd close to Overland they have all kinds on neat stuff there for locarb diets.

Oh I'll have to check that place out. I just bought mine at the local trader joes, but I noticed they disappear from the shelves really fast. I hope they taste better with the Alfredo sauce, but I was hesitant to try anything italian with it because I think the texture works better with an asian dish, and the more flavor the better.

Right sometimes with those low carb products you want a really flavorful sauce to go with it.

I found a recipe that used shredded cabbage as "noodles". Interesting but not too bad texture and taste!

I suppose many cultures use shredded cabbage as a base for food, and it can have a very mild flavor depending on how it's cooked. So that's a good idea!

I found it hard to stomach the pungent aroma and taste of the noodles. So I wash them in cold water for a few minutes and then parboil for longer than the package says. And then I smother it in low-carb vodka sauce with extra garlic powder and parmesan cheese. Not bad for guilt-free pasta...

That's a very good tip. I know that I can be quite sensitive to odors sometimes - there are some cheeses that I just can't eat, even though I know they're good for me.

I agree about washing them in cold water, I found the noodles to have a fishy smell when I first opened up the package. A site I found helpful in learning about the noodles and where to get them is: http://www.shiratakinoodles.net

I mix mine with spaghetti sauce... they have a different texture than wheat noodles, but taste very similar.
