Congratulations on your engagement and for having such a unique theme! Your wedding sounds beautiful.
First and foremost, 4 months is an accurate estimate of time for the visa. Just make sure you do everything EXACTLY as is requested. If not, you end up resubmitting, redoing, etc. which can add months to the wait.
For your menu, consider wintery items like:
~A Smore's Station. Have your guests roast marshmallows and put together this little treat. It will make them all toasty inside.
~Comfort foods like homemade chicken soup, pumpkin pie, mashed potatoes and roasted chicken or cornish hens.
For drinks, don't forget to offer hot chocolate with whipped cream. Also, consider limiting your bar to stay within budget. Offer wine during dinner and some signature drinks throughout such as:
~Peppermint Patty: Hot Chocolate with Peppermint Schnapps
~Egg Nog
~Bailey's & Coffee
~If a formal event, also consider a cinnamon martini. Cinnamon Vodka with Cinnamon Schnapps served straight up and accented with a candy cane.
Accent all of your drinks with cinnamon sticks, candy canes or just a dash of nutmeg. Small details do not go unnoticed.
For your theme, stationery is a great way to carry a theme out. Consider a snowflake motif on all of your invitations, placecards, menu, etc. You can do this yourself with a rubber stamp, blue ink and a nice card stock. Paper Source is a great place to find these items.

For other decor, I would keep linens white or a slate blue. Usually white linens are less expensive, so go with that if this is the case with you. For centerpieces, silver mint julep cups are inexpensive and would be a great touch to your event. You can find them on sale at

All blue flowers are expensive, so do not use too many of them. Also, if you get flowers such as the baby's breath or white wax flowers, these will hold up well and you and your bridesmaid's could arrange them yourself 1 to 2 days before the wedding. Make sure to cut the baby's breath short enough to where it is sitting right on top of the mint julep cup. Most people do not cut the flowers short enough. This will make them look like a professionally made arrangement.
For your bouquet, you might consider White Amaryllis. They are only available in the winter. Then accent the bouquet with a blue sweet pea or blue forget me not. For the handle of the bouquet, tie it with a very nice slate blue satin ribbon. This will be beautiful!! Consider some of the following flowers for your bridesmaids (or yourself):
Blue or White Hydrangeas. A nice tight bouquet of all hydrangeas would be very beautiful.
White lilies with Blue Hyacinth. The blue hyacinth is more of a deep blue, but still very pretty.
White Roses or Peonies
