I love spaghetti squash! I prepare it a little differently than I have seen posted here. I think it is faster than other ways I have tried.
I put a whole squash in the microwave and cook for 1 minute. Then I cut it in half with an electric knife and scrape out the seeds.
Then I put it flesh side down in a glass baking dish with a little water (about 1/4 inch in dish). I microwave for 8 to 10 minutes depending on the size of the squash. You know it is done when you can easily scrape out the strands with a fork.
I love to put various things over it.
Sometimes I fix a 10 oz. package of frozen creamed spinach in low fat sauce to put over it. Then I add cooked chicken. Usually I add more frozen spinach because the 10 oz. package isn't enough. I only use one with sauce though. Just enough to coat the squash and add a nice flavor.
Sometimes instead of the spinach, I use Birdseye vegetables in a tomato sauce (I think they are called Tuscon maybe?) Anyway, whatever vegetables you like will work. If you really want to stay low cal, don't use a veggie in a sauce.
I have lost my weight and am just trying to maintain. So I allow myself some pleasures. I lost 70 lbs. almost 10 years ago and have kept it off, but I really pay attention to what I eat. I tell people it isn't about a diet, it is about changing your life!
