Some nutrients in salad ingredients need fat. These nutrients are fat-soluable and need fat to break down properly in your body. This includes lycopene and beta-carotene. If you use a fat free salad dressing, then the nutrients can't get where they need to go.

What about low-fat dressings? They just don't do the job. Fat based dressings substantially increased the absorption of healthy carotenoids.
