Aleppo Pepper has become such a favourite of ours. It is a Middle Eastern Pepper, medium heat, but awesome of depth flavour. It is available at many ME Markets, also have seen it on line at such as Penzey's. It takes boring to a different level without overpowering heat which allows the other flavours to meld.
