good idea! I'm not a big chef, but I like meals with lots of fruit in them during spring. For example, I've always liked salmon with mango sauce. You can have that with Jasmine rice and a light salad. Add white wine or even some chamgpagne and you have a nice spring meal. If you can eat outside and set up candles that makes the mood perfect!
For desert, maybe strawberry shortcake or simply strawberry with ice cream...
