Lisa, I sent the following in an email link to you - but not sure if it got to you since I didn't receive a response - figured I would copy/paste it into here - thanks!
Hi Lisa (Host),
You mentioned in your post that I was NOT eating enough calories...I will be honest and don't really know the ins/outs of the low-carb...just what I have read.
I guess I need to eat more, but do you have suggestions as to what to read to give me specifics of what is good and what is bad? I don't want to cause any harm to my body.
I started the low-carb diet on 5/2/04 and to date have lost 26 lbs. Just to give you an idea of my "idea" food intake on an average day.
Breakfast:
2 scrambled eggs with cheese & some bacon with either decaf Hot Tea w/a splenda packet or water.
Lunch is:
Salad with Ranch Dressing with Grilled chicken, American cheese, Celery, Radishes, and cucumbers.
with Water
Dinner is: Meat with green beans and possible other veggies with dinner -- depending on family meal....I can venture in Cottage Cheese or some fruit with a Caffeine Free Diet Coke.
During the day while sitting at my desk, I do drink approx. 6-8 glasses of water a day from our office water cooler.
I don't feel sickly at all, but I also don't want to make myself that way either. I only notice really the loss of strength while doing things like blow drying my hair (my arms get really tired). Other than that, I feel and in my opinion starting to look great!

Lisa, I really would appreciate hearing back from you -- it is really important to me. The more information you can give me the better I will be. Please note that I don't ever feel like I am starving myself, I am always full after eating.
I have treated myself once in a while as well with Small piece of cake at a birthday party, or when I went out to eat with family at Wendy's instead of my normal salad, I have had a cheese burger (let me say that my first one was Heavenly - haha). So I do have "things" that are not low-carb every once in a while.
Thanks for taking the time to read this, and look forward from hearing from you
