Here's a progress report for those who claim "nobody stays on low carb". In fact most people I know nowadays have been on low carb for quite a while and loving it!

I went on with my boyfriend on 6/14/03, so almost exactly 10 months ago. I started at 140 pounds, got down to 120 by December and easily kept it off since them. This isn't "hard", it is just the way we eat now. Here are the old notes.

You do a great job of stressing the healthy aspects of low-carb diets - thanks for that. You are quite an inspiration.

I definitely feel strongly that eating low carb IS healthy if done the proper way - following the instructions given in the various books. It involves exercise, drinking lots of water, eating lots of veggies. It's not the bacon-saturated-fat-couch-potato diet that some make it out to be <img src="/images/graemlins/smile.gif" alt="" />

Yes that's part of what impresses me so much about this. Back 5-6 years ago I literally used to mountain bike daily and ran around a lot at work. So I was *always* on the go. For the past 4 years or so I've worked from home and have been so stationary that I eat at my desk, am there all day and night, and only leave to go to sleep and use the restroom.

My boyfriend had gained so much weight that he didn't feel *able* to bike and such. So we began in small steps, doing some walking and such as we began to lose weight. But really, the more weight we lost, the more energy we got, the more we'd just go out for walks or out mowing the lawn and such.

Even so, I am still stationary most of the time. I don't exercise regularly (as much as I mean to). But when we were down in Florida we were walking all day on long hiking trails without any trouble at all, while my sister was quite tired. And I felt *great*! It's all because we're eating more healthy now.

So yes, now I want to exercise more - and most importantly I have the *energy* to! Before I felt so sluggish, when I ate tons of carbs. My energy was like a rollercoaster - short highs and long sluggish lows. Now I have a nice even keel, I'm up for a walk in the morning or going out doing stuff in the evening.

And our food is so delicious <img src="/images/graemlins/smile.gif" alt="" /> Eggplant, broccoli, cauliflower, salmon! We eat so much better than we ever did before.

We just came back from the Nantucket Wine Festival which is a great festival out on the island of Nantucket (where Moby Dick was set). This involved a ton of walking, and we even deliberately walked out to the festival rather than taking the shuttle bus. We had great amounts of energy! The only time we felt sluggish is when we had some pizza for lunch - it was the only thing we were able to get in the short time we had. We felt really sleepy after that! But once it got out of our system we were energetic again.

It's amazing how people eat big meals of mashed potatoes and sugar-rich corn and then feel sleepy ... and think it's normal. It's not normal to sleep away your life <img src="/images/graemlins/smile.gif" alt="" /> We got to talk to famous chef Todd English about low carb foods, and to the Sam Adams brewers too. We talked to a chocolate maker who explained why maltitol is so critical, at least for now, in most chocolate products, even though a few people have issues with it.

I'll be posting my notes soon about all the great low carb information we got for you all!

Just an update from March 2005 - Bob is still down at his 220 or so weight, and I am still down at my 120 range weight. We aren't "dieting" - we are "eating healthy" and it really has made a big difference in our lives. Bob used to be tired all the time - now he plays basketball 3 times a week and baseball on the other days, and he even got a bowflex to get his arms stronger for baseball. He never would have had the energy to do these things before. Now that he has all the energy, he is excited about going out and playing sports - which of course gets him even more healthy!

I still sit at my computer all day working, but I do get out and garden a bit now that spring is here <img src="/images/graemlins/smile.gif" alt="" />
