I just have a hard time eating cheesecake without the crust. I've seen a lot of improvised crust recipes, even one which contained PORK RINDS!
This one, I thought, sounded best: 2 cups raw Brazil nuts 4 Tbsp. butter 2 tsp. Brown Sugar Twin pinch of cinnamon pinch of salt

I never had a thing for the crust...just that sweet cheesy smooth taste...
Uhrr...I'm going to go grab a slice.

I've never been a huge fan of cheesecake, but I am eating the last slice of the Entenmann's Fabulous Fudge Nut Brownie right now and it is SO good. Every time we get these to test, it vanishes immediately. It's 8g of carbs and as a warning it has 10g of sugar alcohol. We've fed this to MANY people and nobody has had any maltitol problems - so I'm curious to hear if any of you forum visitors have tried this and had any issues!

Thank you for that cheesecake recipe, and the ideas for crusts (I really prefer cheesecake with a crust). I gotta get to the store to get the ingredients and try that! Maybe tomorrow.
Question about the Entamens (cant spell it) stuff... I didn't know they did low-carb stuff! Is this new? Is it available in regular super markets? I'll have to take a look. I generally try to stay away from their displays, but maybe I'll be pleasantly surprised.
Since I'm thinking of yummy desert items ... I highly recommend the Atkins chocolate-mint-chip icecream. It is incredable! I think it does have sugar-alcohols though.

If you want to make the cheesecake even yummier without adding more carbs...get your favorite flavored sugar free jello and add about 1/4 of the pack to the topping.

I made the cheesecake, and it was quite tasty <img src="/images/graemlins/laugh.gif" alt="" /> . But the texture isn't quite right. I wonder if its because I used "extra large" eggs. When a recipe calls for eggs, is that generally small/medium/large?
I was quite pleased with the crust I made for it though! I smashed up some nuts (walnuts, pecans, brazil and hazel nuts) then added some hi-lo cereal (was about have nuts half cereal). Then added butter til it stuck together, and some splenda. Tastes quite good with the cheesecake mixture. I didn't bother with the "topping". If I do it again, I'll use less egg and maybe try mixing half the batter with strawberry jello, then swirling the 2 together! Mmmm mmm mmm.
I'd better give 1/2 the thing to my sister soon though, or I'll end up eating an entire cheesecake myself this week!
I'm wishing I'd brought myself a slice to work.

Yes Entenmann's has an entire line now of low carb breads, cookies, and more. They are all REALLY delicious and highly recommended as a treat - although like all sweet things, you shouldn't grow to eat them daily! <img src="/images/graemlins/smile.gif" alt="" /> The point of low carb is to eat truly healthy things most of the time, not to eat 'not really awful' sweets <img src="/images/graemlins/wink.gif" alt="" />

I made the cheesecake too without the topping. I used large eggs but still the texture didn't turn out quite right. The cheesecake was still yummy though. I think I liked it better before I cooked it though, without the eggs. If I were far enough along on my diet to start eating fruit, I would use the stuff as a fruit dip. When I tasted of it before it had eggs, I could imagine eating it with yummy sweet strawberries. Perhaps next time I'll just use the egg whites and bake it and see if that makes a difference.

You can always have the strawberries as a special treat - they are VERY nutritious and a single day of them won't hurt much. Just think - in the "old days" a treat was sugar, sugar and more sugar. In your new life, strawberries are a HEALTHY treat that is good for you!
