We did a crock pot beef recipe last weekend and it was DELICIOUS and then we had leftovers all week which were equally good. I'll have to get my boyfriend to write down what he did, but I highly recommend crockpot cooking to any low carbers. It was SO easy to cook and then the leftovers were great. We'll probalby use the crockpot as much as we do our deep fryer which is quite a lot <img src="/images/graemlins/smile.gif" alt="" />

My husband's physician suggested a change in diet and at the time it was layed out more as low starch than low carb. Over the past few years, we realised that it was the high carbs than interfere with my husband's health.

It took me far too long to realise the benefits of this for him and to "cook with the prgram".

I think it's hard because our whole culture has become hugely pushing carbs. Nutritionists kept telling us that eating lots of white bread and white pasta and white rice was good for you. You always see these things in commercials - when do you see people eating veggies and shown to enjoy it? The only time they have veggies in commercials is when kids are being forced to eat them. Why is our whole culture so anti-vegetable? It's very strange ...
