This is one of them.

Jamie's Chicken Salad Recipe
Recipe Summary Prep Time: 25 minutes Cook Time: 1 hour Inactive Prep Time: 45 minutes Yield: 6 to 8 servings

1 (3-pound) chicken Salt and pepper
1 onion, quartered
2 celery stalks
1 cup chopped celery
4 hard-boiled eggs, chopped
2 teaspoons seasoning salt (suggested: Jane's mixed up Krazy salt)
1/2 cup mayonnaise
1 teaspoon lemon-pepper seasoning
1/4 teaspoon ground black pepper
2 to 3 tablespoons chicken stock

Place the chicken along with the salt, pepper, onion, and celery stalks in a large stock pot. Cover with water and bring to a boil. Lower the heat and simmer until the chicken is cooked through. Remove chicken from pot, cool, and remove skin and bones. Reserve the liquid. Dice the chicken and place in a large bowl. Add the chopped celery, eggs, seasoning salt, mayonnaise, lemon-pepper, pepper, and some reserved stock and mix well.

Deb I have a pea salad that I make every year for our family picnic. It was my husbands Grandmother's recipe and I've been making it for about 4 years.

Pea Salad

3/4 cup white vinegar
3/4 cup sugar
1 tsp salt
1/4 tsp pepper
1 Tbl water
1 can shoepeg corn
1 can small peas
1 cup diced onions
1 cup diced celery
1 small jar pimentos

Combine vinegar, sugar, salt, pepper and water in a small sauce pan and bring to a boil. Stirring often to make sure the sugar is disolved. Set aside and let cool.

In a large bowl combine peas, corn, onions, celery and pimentos. Pour vinegar mixture over all the vegetables and stir thoroughly.

Place in the fridge and let chill. It tastes a lot better if it sits overnight.

(This will keep in the fridge for about three weeks because of all the vinegar.)

That sounds good too.. peas and my hubby .. don't mix but he loves pea salad.. so I'm sure we will try this recipe too <img src="/images/graemlins/smile.gif" alt="" /> I make a pea salad with tomatoes and spam.. I think it's in the archives on my site.. but we like to try different recipes. Thanks a bunch! Deb

I know 4th of July is over but our family picnic was so full of food I thought the table was going to collapse! Talk about yummy!! There were four generations of country cooks. :love:

One of my Aunts took the pea salad recipe and made it into a bean salad. She took out the peas and added three or four different kinds of beans. It was delicious! I asked her about the recipe and she said it's the same as my pea salad but instead of peas she uses whatever kind of beans she's got in the cupboard. Maybe your hubby would like that instead of the peas.

I also took a fruit tray with a dip. The recipe was super easy and incredibly good. I'll dig that out this afternoon.

Hey Deb <img src="/images/graemlins/smile.gif" alt="" /> Sorry it has taken me so long to get back with the fruit salad dressing recipe. This recipe is SO good and it can be used as a dip or mixed right in with the salad.

Fruit Salad Dressing

1 whole egg, slightly beaten
2 Tbsp sugar
juice of 1 lemon
10 large marshmellows
1 cup whipped cream

Mix the egg, sugar and lemon juice in a medium sized sauce pan, cook until thick (make sure you stir constantly). Turn heat on low. Add marshmellows and stir until they are thoroughly melted and the egg mix is well blended. Let the marshmellow mix cool.

Mix your whipped cream according to package directions (I use Dream Whip). Blend whipped cream with the marshmellow mix and stir well.

Pour over any fruit salad or into a bowl for dipping.

Cheryl, That sounds really good! I'm going to have to try it in a party tray.. or maybe as a fruit salad <img src="/images/graemlins/smile.gif" alt="" /> either way I bet it's great. thanks for posting it!!
