Is there anyone out there who loves soups as much as I do (only second to pasta <img src="/images/graemlins/wink.gif" alt="" /> ) ? For me they're mostly fall/winter or comfort food but some, like the following, are very nice in summer, too!

Carrot and Coriander Soup

Ingredients:

* 1 Onion - chopped well.
* 1 Clove garlic - as above
* 8/9 medium carrots - sliced in half lengthways ( chop up later when cooked)
* Knorr Vegetable stock - 1 1/2 cubes
* 1 1/2 pints water
* Pinch cinnamon or nutmeg
* 1 Knob of low fat butter/marg
* Handful of chopped fresh coriander
* Salt and pepper 2 tablespoons cream/a splash of milk (if you want)

Preparation Instructions:

1. Boil carrots until cooked and cut up roughly.

2. Chop coriander, onion and garlic.

3. Melt butter in pot on low heat, add garlic, then onion and sautee until onions are translucent.

4. Add 1 1/2 veg stock cubes and 1 1/2 pints hot water (use the water that the carrots were cooked in, adding extra hot water if there's not enough) - stir until cubes have dissolved.

5. Throw in cooked carrots and add a good pinch cinnamon or nutmeg and chopped coriander.

6. Pour mixture into blender, in stages if need be.

7. Return blended soup to pot, add salt and freshly ground black pepper and a couple of tablespoons of cream if you like.

AND, the good thing, It can be frozen!

This sounds great! thanks for sharing it.. I love the fact that it can be frozen.. I guess I'm thinking about people who are elderly or busy who enjoy eating soups and things they can heat and eat. It's too hard for some of them to cook a meal so recipes that can be prepared beforehand and heated are convenient! I've never had carrot soup but I love cooked carrots and I could live on soups so I bet this will taste really good!

Hi Deb,
Carrot and Coriander soup is quite big in Ireland (where I live), not really traditional food but you see it on menus a lot. I like carrots but what I really love is coriander, so this is perfect for me!

That's cool! I didn't know you were from Ireland. Part of my ancestry is Irish, with French and Cherokee.. what a mix huh? Anyway I just wrote an article on Ireland as July's monthly holiday recipes.. Can I include this recipe in that article? It will come out on my Holiday/Seasonal site on the 1st. And yes, I do have another name - Barbara. But wherever I try to register for anything that username is always taken in all variations I can think of. <img src="/images/graemlins/confused.gif" alt="" /> So I had to come up with something else.
I'm going to take a look at your article once it's posted! I've been living in Ireland for 4 years now but I'm actually from Germany. Your ancestry sounds pretty interesting, good mix!
