Hello,
I'm mad into pasta and always on the lookout for new, easy recipes. I think pasta is great for summer - doesn't take long to prepare, can be eaten cold as a salad and great as accompaniment for BBQs. Here is my newest favourite:

Tasty Pasta Mix

Ingredients:
Pasta (for the required amount of people)
6 tblsp passata
sprinkle of oregano
2 slices of ham
2 tomatoes
1 yellow pepper

Preparation:

Cook pasta in a pot of hot water for 10mins.

While pasta is cooking,chop tomatoes,ham and yellow pepper.

When pasta is cooked,drain and add back to pot.

Add the 5tblsp passata and stir.

Add in ham, pepper, tomatoes and oregano.

Stir ingredients together and leave for 1-2 mins.

Stir again and serve....delicious!

Quick and easy and can be re-heated for a quick lunch for work.

That sounds really good! My husband adores pasta salads and I love pasta myself so we are going to have to make it soon!
I have a Ranch Shrimp Tortellini salad that I enjoy it is on my site in archives but I'll post it here in case you like ranch.


1 1/2 c. Shrimp, shelled and deveined
3 c. cheese stuffed tortellini
1 1/2 c. ranch dressing
1 c. cherry tomatoes
2 Tbsp. chopped fresh bell pepper
2 Tbsp. chopped sweet onion
1/2 c. celery chopped

Cook tortellini as directed on package. Place cleaned shrimp in boiling water until pinkened and curled up a bit. (don't over cook). Rinse shrimp in cold water. Add to tortellini. Add the other ingredients and mix together. Serve with garlic bread.

I LOVE pasta! I could eat pasta every night of the week and not get sick of it. Unfortunately I married a man who thinks it's not a meal if there's no meat or potato. Here's a recipe that my MIL gave me to satisfy both of us. It's not a salad but it's very good!

Chicken Spaghetti Casserole

5 oz spaghetti noodles
1 can cream of mushroom soup
1 can sliced mushrooms
1 small onion (I use 1/4 cup frozen onions)
1/4 cup diced pimentos
1/4 cup diced green peppers (I use frozen)
1 3/4 cup grated sharp cheese
2 cups cooked diced chicken
salt & pepper to taste

Cook spaghetti noodles. Pour the rest of the ingredients, except cheese, in a large casserole dish and mix thoroughly. Add 1 1/4 cup of the cheese and stir again. Sprinkle the rest of the cheese over the top of the casserole and bake at 350-375 for about 45 minutes.

I like to serve this with fresh honeydew or cantaloupe during the summer. It's good during the summer because it's only one dish and you can add some fruit and have a complete meal. I use the low fat cream of mushroom and cheese and frozen vegetables and diced chicken to make it low fat and easy.

Cheryl, your husband is like mine so! <img src="/images/graemlins/wink.gif" alt="" /> I love pasta, same as you and could eat it every day. He on the other hand prefers potatos. So we don't have pasta very often. But I guess he'll like your casserole! Sounds really good and doesn't need much preparation as far as I can see! I'll try it soon. <img src="/images/graemlins/smile.gif" alt="" />

That sounds good! I have had chicken spaghetti.. but didn't have a recipe for it.. so I will definitely fix this too.. Thanks for sharing that. Deb

Here is one of my favorite pasta recipes. I think this one is good for summertime. Enjoy!

Baked Pasta with Zucchini and Mozzarella

4 servings

Ingredients:
3/4 lb fusilli or orecchiette or ortini pasta
5 small zucchini, 1/2 inch slices
salt and pepper
1 (28 ounce) can Italian plum tomatoes, drained/chopped
8 black olives, sliced
3 tablespoons parmesan cheese, freshly grated
1 teaspoon fresh rosemary
1/2 lb mozzarella cheese, cut in 1/2 inch cubes

1. Preheat oven to 350 degrees.
2. In a large frying pan, heat oil.
3. Saute Zucchini until lightly browned, about 5 minutes.
4. Season with salt and pepper.
5. Transfer to an oiled shallow casserole dish.
6. Cook pasta in boiling salted water, when pasta is almost cooked, drain
and add to Zucchini.
7. Add tomatoes, olives, Parmesan, rosemary and 1/2 of the mozzarella.
8. Sprinkle with a little more salt and pepper; if desired.
9. Gently mix together.
10. Cover with the remaining mozzarella.
11. Bake until cheese is melted and the top is slightly browned, about 15
minutes.

That sounds good too! I love pasta just about anyway you fix it.. sometimes I'll just cook some and season it a bit and top with parmesan.. <img src="/images/graemlins/smile.gif" alt="" /> works for me. Thanks for sharing that.. I love to try new recipes I haven't tried before.

Hmmmm, this sounds yummy - think I'm going to try that soon! I just love pasta in all forms! Could eat it every day. Unfortunately my hubby is more of a potato person <img src="/images/graemlins/frown.gif" alt="" />

I know the feeling.. <img src="/images/graemlins/smile.gif" alt="" /> Tim frowns if he doesn't get french fries or fried potatoes more often than I care to eat them. Rice and Pasta gal here! But a born and bred Okie man who likes meat and potatoes is my hubby.
